Truly amazed by the service and food. Chef Polo is warm and friendly and made every effort to connect with us and rest of diners. Staffs were very busy during the Sunday Brunch period but tried their best to ensure all ordered items are served to the table. Nestled in a cozy corner in Orchard, Estuary Restaurant & Bar is not your typical seafood restaurant. This under-the-radar spot is where those in the know go for a unique dining experience, combining contemporary local and Asian flavours with an intimate atmosphere. They specialize in dry-aged seafood, which intensifies the umami flavour and creates a perfect texture balance. Of course, they also have a selection of live seafood, with oysters being a particular highlight.
The ambiance here is cozy and intimate with dim pink-hued lighting and comfortable chairs, perfect for a quiet dinner or a night out with friends. On a recent weekday visit, the atmosphere was just right - lively enough to be enjoyable, but not overly crowded.
As for the menu, it is quite diverse, ranging from seafood-oriented small plates to dry-aged and charcoal-grilled main courses. They offer both à la carte and a 7-course omakase option. We opted for the à la carte menu for more flexibility.
Hokkaido Bafun Uni
Starting off with the Hokkaido Bafun Uni, it was a simple yet luxurious treat. The grilled brioche toast topped with egg gribiche and fresh sea urchin is a symphony of textures and flavours, combining the warmth of the toast with the cool, creamy richness of the sea urchin.
Chef’s Signature Grilled Cabbage
Not everything at Estuary comes from the sea. Their Grilled Cabbage, boiled and then charred, is placed atop herb cream cheese and drizzled with peanut chili. It's a simple yet flavourful dish. The rosemary cheese beurre blanc adds a creamy, savoury dimension with a touch of heat, keeping us reaching for slice after slice of the cabbage.
Dry-aged seasonal fish
We couldn't miss trying their dry-aged fish. The 7 Days Dry-Aged Hamachi, served with koji cream and charred corn, was exceptional. The fish had a perfect crispy skin and tender flesh, complemented by the tangy and smoky sides. They also have new catches weekly, so there's always something new to try.
Sticky Date Pudding
For dessert, we tried the recommended classic Sticky Date Pudding. Warm rich pudding, paired perfectly with luscious butterscotch and silky vanilla ice cream made for a satisfying end to the meal.
It's always happy hour here, offering one-for-one drinks all day. The wine list is unique, featuring biodynamic, organic, and natural wines. They also have a range of local craft beers and bespoke cocktails, providing plenty of options to pair with your meal.
